- 2 lb ground beef
- 2 garlic cloves minced
- 2 14.5 oz cans peeled and diced tomatoes drained
- 2 15 oz cans pinto beans with liquid
- 4 cups of water
- 1 10 oz package frozen mixed vegetables
- 1 15.2 oz can whole kernel corn Drained
- 2 tsp chili powder
- 2 14.5 oz can diced tomatoes with green chile pepper with liquid
- 4 medium baking potatoes peeled and diced
- 2 packages kielbasa sausage sliced into ½ inch pieces
- 2 tsp ground cumin
- 1 onion chopped
- salt and pepper to taste
Instructions
- Sauté onion in a dutch oven on medium-heat. Add the ground-beef and cook till it is no longer pink. Add sliced sausage.
- Pour in tomatoes, corn, pinto beans, potatoes, diced tomatoes with veggies and chiles. Mix everything till combined, add spices. Then add water, bring to a boil and simmer for 1 hour.
